Tasting notes:
The Macallan needs no introduction, but if you are interested in reading more please see my review of Macallan 18 Year Old Fine Oak. This 10 year old is from a different “line” of Macallan whiskies, because it is matured exclusively in Sherry Casks from Spain. 
Nose: Sweet cherries – glazed cherries and dark fresh cherries – intermingle with anise seed, basil and mint. The soft smell of caramel oozing out of chocolate – think Freddo Frog caramel – is met with saltiness and bath salts. The sherry offers a beautiful layer of mist through which the oak shines and peaches and cream shine.
Taste: The sherry hits the palate moderated by dark chocolate and oak, and the glazed cherries turn sour with a drizzle of golden honey and raspberry sauce. Skewed to the sweet side after an initial bitter surge, this whisky is a tad unbalanced and could do with a few more years in oak.
Finish: Sweet candied stone fruits linger with salted caramel, marzipan and a bitter fog of wood.
